Salmon Patties

      Salmon Patties
      1 large baked potato
      1 cup potato chips
      1 tsp Old Bay seasoning
      2-7 oz pouches salmon or 1 14.75 oz. can salmon, drained and flaked
      1/4 cup mayonnaise
      1/4 cup very finely-chopped green pepper
      1/4 cup very finely-chopped spring onion
      1 tsp Dijon mustard
      1 cup Panko bread crumbs
      1 tsp olive oil
      Wash baked potato and prick several times with a fork. Put in microwave on a paper towel.

      Heat on high 5-8 minutes until done. Let cool. Place potato chips in a food processor fitted with a metal blade.

      Pulse until crushed. Add baked potato with skin and Old Bay to food processor. Pulse until the mixture becomes the texture of thick mashed potatoes.

      Transfer to a mixing bowl. Add remaining ingredients. Form mixture into 1/2-inch thick salmon patties.
      Spread Panko out in a thin layer on a plate.

      Dip salmon patties into Panko, coating both sides. Heat olive oil in a large nonstick skillet over medium-high heat. Add salmon patties.

      Fry until golden brown on both sides.

      Thank you so much for posting this! I have been wanting to make salmon patties for about two weeks, but didn’t really like my old recipe that much.

      Aldi has a sale on frozen salmon. Can I use those in place of canned salmon?

      kungfujoe94, I wouldn’t waste frozen salmon fillets on patties! I would broil, bake, or grill those puppies and serve with a side of veggies or salad and pierogies! Or make the salmon sandwich that I posted yesterday!

      Hmm, that’s a good point. I thought about buying canned salmon but, I didn’t want to spend upwards of $2 per can. I bought the frozen salmon but, had decided not to make patties.

      kungfujoe94…where are you buying canned salmon for that price?!! I can buy canned salmon for $.89-$1.25, depending on the brand! What I usually purchase is in a big red can for $.99.

      I don’t remember the brand, I just usually grab the can because I know the pricegiggle smiley I will try to remember to check the brand tomorrow when I go shopping and get back to you;-D

      oddly enough, i found that price at aldi. i couldn’t believe it. usually everything is much cheaper there.

      they have only one type of canned salmon and it is wild caught. i don’t really shop at other stores but, i will gladly go somewhere else and stock up. thanks for getting the info for me.

      my budget really appreciates it!

      kungujoe94…I checked the can and saw that they have raised the price to $1.89;-/ It’s called Blue Ball. However, I noticed the store brand was $1.25. It was flaked like tuna which would work out about the same since I have to remove bones and such and flake it myself.

      Next time I make salmon patties I’ll try this and let you know;-D

      mos, what store do you find these prices? i’ve tried a few in my area and no one comes close to your price.

      I don’t know your location, but I shop at Food Lion in NC. Aldi’s is here, but not close to me. After three visits, I compared the gas to the savings and decided that it wasn’t worth it so I stick to Food Lion.

      Tell me some of the stores in your area. I lived in a few places in our wonderful country and may be able to comment.

      wow! i checked our food lion and the salmon price was higher than aldi. i don’t know if it matters, our food lion was a higher-priced bloom.

      they switched back to food lion but, their prices did not. we also have shoppers food warehouse and giant. i’ll check those.

      i may have to find some coupons or something. or maybe dollar general sells it. i’ll let you know what i find.

      Dollar General is where I buy many items, well, the few canned items that I use plus white and brown rice. I’ve never seen canned salmon. If you find it there, let me know as I’ve gotten friendly with the manager and district manager when he pops in occasionally when I’m there and I’ll approach them about this;-D It looks like we’re on a mission to find more affordable canned salmon to make salmon cakes!
