1 lb boneless, skinless wild Alaskan salmon fillet
1/2 cup fresh cilantro leaves
2 tps mayonnaise
1 tbs red miso paste
1 shallot, chopped very fine
2 scallions, chopped
1 heaping tbs finely grated or minced ginger root
pinch of cayenne
sesame or olive oil for cooking
freshly ground pepper
lemon or lime wedges
Cut the salmon into 1” chunks and place the chunks in the bowl of a food processor.Pulse rapidly several times until the salmon is coarsely chopped. Add the cilantro, mayonnaise, red miso paste, shallot, scallions, ginger root and cayenne and pulse until blended.
Form the salmon mixture into 4 large or 6 medium sized patties. Cover the patties and refrigerate for an hour (or up several hours).Lightly oil and season the patties just before cooking.
Grill, pan sear or broil the salmon burgers for about 3 min on each side. Makes 4-6 burgers
