Make this ahead of time, bag it or place in a container, then place in cooler. It’s a great lunch to have when you arrive at your campsite. You’ll be satisfied, but not so full that you don’t have the energy to set up camp!
Salad
two cups of green leaf lettuce
1/4 cup raw green beans
1/4 cup snap peas
1/4 cup chopped tomato
1/4 cup sliced carrots
1/4cup apple slices
Top the salad with juice squeezed from a few lemon or lime wedges. Or, if preferred, use a lite commercial salad dressing, or a bit of oil and vinegar. Just remember, dressing and oil adds extra calories.
Serve salad with a slice or two of fresh whole-grain bread and a tall glass of sparkling water with a slice of lemon or lime. Serves 2, but can be easily multiplied.
