this is your basic ‘noodle’ soup only better;-) Saffron Broth with Egg Noodles:110: 4 cups light meat broth or other broth 2/3 cup small egg noodles 1/8 tsp saffron (use curry or turmeric if no saffron on hand — it is expensive;-) salt, to taste 2 tbs parsley black pepper, to taste Parmesan, to serve Bring the meat broth to a boil in a large pan. Add the egg noodles and saffron. Simmer, partially covered, until the pasta is cooked, following package directions.
Take the soup from the heat. Taste and adjust for salt then sprinkle in the parsley. Season to taste with pepper.
serve hot, accompanied by plenty of Parmesan. 4 servings = about 145 calories. such good, simple, comfort food for those nasty days!
