Sadler’s Restaurant and Bakery’s Beef and Pumpkin Skillet
l lb ground beef
2 cups pumpkin chunks
1/3 cup chopped onion
1 chopped red pepper
2 cloves garlic, minced
2 cubes beef bouillon mixed in 1/4 cup hot water
1/2 tsp cinnamon
1/2 t nutmeg
1.5 tsp powdered ancho chiles and 1 tsp Cajun seasoning
salt and pepper to taste
Microwave pumpkin chunks for 3 to 4 min, until just fork-tender.
Put onion in skillet with a little olive oil.
Add garlic and stir a few sec.
Add ground beef, and chop the pepper.
Add the pepper and cook until beef is nearly done.
Add liquid and scrape the bottom of the pan.
Add spices, adjusting the seasonings to taste.
Cook another 3 to 4 min.
Garnish with cilantro or parsley if desired. Makes 3 servings.
