Citrus Salsa
Prep Time: 15 Minutes Cook Time:
Serves: 5Ingredients
4 roma tomatoes
2 large oranges, peeled and diced1 large Vidalia onion, peeled and chopped
2 jalapeno peppers, seeded and minced
2 tablespoons fresh lime juice1/4 cup fresh orange juice
3 (1 gram) packets SPLENDA
1 tablespoon chopped fresh cilantro1 teaspoon salt
Directions Bring small saucepan of water to a boil. Blanch tomatoes
for 30 seconds, and then rinse with cold water. Peel and choptomatoes.
Place all ingredients in a large bowl and stir until mixed
thoroughly. Allow to stand at room temperature for one hour. Mix andserve. Refrigerate any unused salsa.
Serve Citrus Salsa with baked tortilla chips or on top of grilled
chicken or fish..
Deliciously Simple ApplesaucePrep Time: 15 Minutes
Cook Time: 30 MinutesServes: 8
Ingredients
3 pounds apples – peeled, cored and chopped3 cups water
1/4 cup SPLENDA No Calorie Sweetener, Granulated
1 tablespoon lemon juice1 teaspoon ground cinnamon
Directions Place apples in a large saucepan and just barely cover
with water. Simmer over medium-low heat until apples are tender, 15to 20 minutes.
Run cooked apples through a food mill or blender. Stir in the SPLENDA
Granulated Sweetener, lemon juice, cinnamon. Cook over medium heatfor about 3 to 5 minutes.
Exchanges per Serving
1 1/2 Fruits.
Raspberry Hot ChocolatePrep Time: 2 Minutes
Cook Time:Serves: 1
Ingredients
2 packets SPLENDA No Calorie Sweetener Flavor Accents, Raspberry1 packet sugar free hot cocoa mix
1 cup 1% milk
Directions Mix Splenda No Calorie Sweetener Flavor Accents, Raspberryand dry cocoa mix together in a mug or coffee cup. Heat milk on stove
top or microwave.
Pour hot milk into mug. Stir well. Serve immediately.Serving Size: 1 recipe (about 8 oz)
Exchanges per Serving: 1 Reduced Fat Milk

Chocolate Velvet MoussePrep Time: 25 Minutes
Serves: 6
Ingredients3 ounces unsweetened chocolate
1 cup low fat milk
1/4 cup egg substitute1/2 cup SPLENDA No Calorie Sweetener, Granulated
1 teaspoon cornstarch
2 tablespoons Grand Marnier (or Curacao, Triple Sec, or brandy)*1/2 cup heavy cream
3 cups sliced strawberries
Directions Place chocolate and milk in a medium saucepan. Heat overmedium heat until chocolate melts. Set aside.
Stir together egg substitute, SPLENDA Granulated Sweetener,
cornstarch and Grand Marnier in a small mixing bowl. Add to chocolatemixture. Stir constantly. Cook over medium heat while stirring
constantly, until mixture begins to thicken (approx. 3-4 minutes).
Remove from heat and pour into the bowl of a blender or foodprocessor. Blend or process briefly (10-20 seconds) to make a more
creamy texture. Pour into medium bowl and cover.
Refrigerate chocolate mixture approx. 2-3 hours or until cool. Whipcream until stiff and fold into chocolate. Refrigerate overnight to
set. Will keep refrigerated for 3 days.
To serve, layer strawberries and mousse in 6 all- purpose wineglasses.
Note
Alcohol can be replaced with 1 teaspoon orange extract..
