Romance Cocktail
10 ripe Bing cherries, pitted
6-10 mint leaves
1 hot chili pepper, like a Serrano, seeded and coarsely chopped
2 oz lemon juice
2 oz ginger simple syrup
4 oz rum
4 oz club soda (or mineral water)
Wash cherries, mint leaves and chili pepper. Prepare your ginger simple syrup and cool. Put cherries, mint leaves, chili and lemon juice in a tall narrow glass.Use a muddler (or the handle end of a meat tenderizer or a fat wooden spoon) to smash ingredients. Fill a cocktail shaker with ice. Pour the muddled contents, plus the ginger simple syrup and rum into the cocktail shaker.
Shake hard, real hard and then pour the ingredients into two tall glasses or into martini glasses and stir with the club soda.
If you want to make this as a non-alcoholic drink, substitute rum with more club soda or sparkling mineral water.
