Rocky Road Ice Cream Shop Pie
Ingredients:
1 1/2 cups cold half and half or milk
1 pkg (4 serving size) chocolate pudding mix
8 ounce tub whipped topping (cool whip)
1/2 cup chocolate chips
1/2 cup mini marshmallows
1/2 cup chopped nuts (I use walnuts)
Packaged chocolate graham cracker crustDirections:
Mix milk and pudding mix with wire whisk until well
blended. Let stand 5 minutes, until slightly
thickened.Fold whipped topping, chips, nuts, marshmallows into
pudding mixture. Spoon into crust.Freeze pie until firm, about 6 hours or overnight.
Let pie stand about 10 minutes before serving, to
soften. Store leftover pie in the freezer.—-
This recipe comes from “More Joys of Jello,” which has
a lot of great no-bake dessert recipes in it. Most are
quick and easy too. Another one I like is “Hershey’s
Light and Luscious Desserts,” which has bake and
no-bake recipes. They are all reduced fat but taste
really good.I don’t know where to get these cookbooks because they
were both gifts from my MIL. But I’d look ’em up on
half.com or at your library.Jen K
