      18 medium carrots, cut lengthwise, then sliced
      3 Tbsp butter
      1 Tbsp chopped fresh dill
      1/2 tsp salt
      Pepper to taste

      Preheat oven to 350 degrees. Cut carrots in half lengthwise and slice them. Over lap the slices on a sheet of aluminum foil. Add butter, chopped fresh dill, salt and pepper to taste. Seal carrots in foil tightly. Cook on baking sheet 45 minutes, or, until tender.

      Notes: A delicious alternative to plain boiled carrots; roasted with dill!
