Prepare 2 cups stuffing mix as directed on package. Loosen skin from turkey breast and push stuffing under skin before roasting. Cube 2 cups turkey and reserve for later use.
Toss 2 cups cubed left-over turkey, 1 cup each cubed mozzarella cheese and diced tomato and 1/3 cup each sliced scallions and bottled balsamic dressing. Season with salt and pepper. Serve on a bed of arugula.
