Roast Prime Rib

      here it is. the best recipe, imho, there is in the world. that is if you like prime rib and will save your pennies to prepare it!

      lol! my dexh is still trying to figure out my secret;-)
      roast prime rib
      1 4-to 6-lb prime rib (or beef roast, bone-in)
      3 cups sliced onions
      1/2 cup carrots, chopped
      1/2 cup celery chopped
      2 garlic cloves
      1 cup red wine
      2 cups water
      Heat oven to 200 degrees F. Place roaster rack in pan.

      Place roast fat side up on rack. Top with even layer of onions. Place uncovered in oven.

      Bake 3 hours or until internal temperature reaches 170 degree F. Remove from oven. Place roast in shallow pan.

      Remove onions. Cover roast with aluminum foil topped with clean kitchen towel. do not seal sides.

      Let rest 15 to 20 minutes. While meat is resting, increase oven temperature to 375 degrees F. Remove rack from pan.

      Return onions to pan. Add carrots, celery and garlic. Bake 15 minutes.

      With wooden spoon, stir vegetables and remove all drippings from bottom of pan. Transfer vegetables and liquid to large pot. Add red wine and water.

      Bring to a slow rolling boil 4 minutes. Strain liquid into sauce bowl to serve with roast slices. 9 servings = 865 calories.
