      Roast Chicken
      Prepare and roast chicken using your favorite recipe. Shred two cups and reserve for later in the week.

      Spanish Rice with Chicken
      Prepare Spanish rice from a mix using your favorite brand. Five minutes before rice is done, stir in reserved chicken, canned chopped green chiles and diced roasted red peppers. Serve with lime wedges on the side.
