Rice Prepare rice as you normally would for your meal, but make 1 1/2 cups extra and reserve for the next recipe. Any seasonings or additions that you are adding to your rice should be fine for the next rice…it’ll be just be tastier;-)
Red Tomato Rice Saute 1/2 cup chopped onion in 2 tbs olive oil about 5 minutes. Add cooked rice, 1-14.5 oz can diced tomatoes, 1 tsp chili powder, 3/4 tsp coarse salt, and 1/4 tsp pepper. Stir, cover, and heat over low heat until rice is hot, 3-5 minutes.
