Rice
Prepare rice however you like and reserve 1 cup for the next recipe. The great thing about the following recipe is that it can be ANY kind of leftover rice — plain, fried, pilaf, etc.
Cheesy Eggs and Rice Casserole
1 cup leftover rice
4 eggs, beaten
1 cup shredded cheese — any kind works, but I like a taco-blend the best;-)
1 tsp basil
1/2 tsp oregano
salt and pepper to taste
Preheat oven to 350. In large mixing bowl, beat eggs. Add the remaining ingredients and mix until all is moistened and rice is not in ‘clumps.’
Pour into greased 9 X 9 baking pan. Bake until it passes the toothpick test and is golden around the edges, about 25 minutes.
