Rice ~ Carrot-Rice Soup

      Prepare rice as you normally would, just make enough to reserve 1 cup for use later in the week.

      Carrot-Rice Soup
      Cook 3 cups sliced carrots in 3 cups vegetable broth. Add 1 cup cooked rice. Cool; puree in batches in a blender.

      Stir in 2 cups milk. Heat.
