Rice
Prepare rice as you like and reserve 1-2 cups for next recipe.
Almond Rice
1/4 chicken stock
1/4 water
1-2 cups reserved rice
2 tbsp slivered almonds
1/8 tsp saffron (curry or turmeric will work, too)
1/8 tsp salt (optional)
Bring stock and water to a boil in a saucepan over high heat. Stir in remaining ingredients and pepper to taste. Immediately reduce heat to low. Cover saucepan and simmer 2-5 minutes. 2-4 servings depending on amount of rice = about 90 calories.
