1 cup sifted Flour 3/4 cup Oats 1 teaspoon Cinnamon 1 cup Brown Sugar 1/2 cup melted Butter 4 cups Rhubarb cut up in 1/2 inch chunks 1 cup Sugar 1 cup Water 2 Tablespoons Cornstarch 1 teaspoon Vanilla
Crumble flour, oats, cinnamon, brown sugar and butter together. press half of the mixture into an 8 inch baking pan. Cover with rhubarb. In a saucepan cook sugar, water and cornstarch until very thick, remove from heat and stir in vanilla. Pour this over the rhubarb. Sprinkle the remaining flour mixture over the top. Bake at 350 degrees for 1 hour. Cut into 9 squares and serve, warm or cold. Good served with vanilla ice cream on top.
