3 cups sugar
1 cup light corn syrup
1 cup water
1 1/2 pounds of shelled unsalted peanuts
1/4 cup butter, softened
1/4 teaspoon salt
1/4 teaspoon vanilla
Red food coloring
Green food coloring
In medium sauce pan combine sugar, corn syrup and water and bring to a boil. Cook until a test with a teaspoon forms a hard ball in a small bowl of cold water. Remove from heat and add butter, salt and vanilla and mix well.
Divide mixture in half and transfer second half to another bowl. To first bowl mixture add six drops of red food coloring. To second bowl mixture add six drops of green food coloring.
Beat mixture in both bowls until it thickens. Pour into well greased muffin tins, about 1/2 inch. Let completely cool and remove from muffin tins and arrange platter.
