Lemony Green Beans
Toss freshly cooked beans with a little freshly grated lemon peel and lemon juice just before serving.
Cook 3 cups sliced carrots in 3 cups chicken broth. Add 1 cup cooked rice. Cool; puree in batches in a blender.
Stir in 2 cups milk. Heat and serve.
Tex-Mex Macaroni & Cheese
Stir a 14 1/2-oz can diced tomatoes with mild green chiles into macaroni and cheese (prepared from a mix or home-made). Heat through and serve.
Finger Lickin’ Chicken Drumsticks
Season drumsticks with chili powder. Bake chicken at 400? for 30-35 minutes.
Mix 2 cups chilled Bloody Mary mix, 2 diced tomatoes and 1/2 cup each diced bell pepper and seeded, peeled cucumber. Serve!
Mix 1 1/2 cups fresh or canned diced pineapple, 1/2 cup diced red bell pepper, t Tbsp sliced scallion and 2 tsp lime or lemon juice. Serve with fish or meat.
