Savory Spiced Nuts

1/4 cup oil
1 tsp cumin
1 tsp chili powder
1 tsp curry powder
1 tsp cayenne pepper
1/2 tsp ginger
1/2 tsp cinnamon
1/4 tsp garlic powder
6 cups mixed unsalted nuts
1 tbsp coarse salt
In a saucepan, cook first 8 ingredients until fragrant, about 2 minutes. Add
nuts and toss to coat. Add salt and mix thoroughly. Spread nuts in a single
layer on a baking sheet. Bake at 325 F for 15 minutes, stirring
occasionally. Remove from oven and cool. Store in an airtight container, in
the refrigerator for up to 1 month (if they last that long!). Yield: makes 6
cups
