      Pork shoulder arm steak has the same muscle and bone structure as pork shoulder arm roast, only cut thinner. It contains round arm bone and the meaty part of the arm picnic. The outside is covered with a thin layer of fat. It is usually prepared by braising or panfrying.

      Pork Steaks Italiano

      * 1 cup Italian dressing
      * 4 pork shoulder steaks

      Place pork in a shallow dish and pour dressing over. Cover and marinate in refrigerator, turning occasionally, 3 hours or overnight. Prepare grill or broiler. Remove pork, reserving marinade. Grill or broil 6 minutes, basting occasionally with reserved marinade. Turn and grill another 6-7 minutes, basting, until just cooked through.

      Mexican Pork Steaks
      Prep: 5 min, Cook: 15 min.

      * 1 tsp. vegetable oil
      * 4 pork blade steaks, 1/2 inch thick
      * 1 cup chunky style prepared salsa
      * 1/3 cup water
      * 2 Tbs. lemon juice
      * 1/2 tsp. ground cumin
      * 1/4 cup cilantro, chopped

      Heat oil in a heavy nonstick skillet over medium high heat. Brown pork steaks on both sides. Combine remaining ingredients, except cilantro, in a bowl. Season with salt to taste. Pour mixture over chops. Cover and simmer 10-12 minutes. Sprinkle with cilantro and serve.

      Pork Steaks with Apple
      Prep: 10 min, Cook: 1:10.

      * 2 cups dry breadcrumbs
      * 1 cup apples, chopped
      * 1/3 cup raisins
      * 1/3 cup celery, chopped
      * 1/3 cup onion, chopped
      * 3/4 tsp. poultry seasoning
      * 1/3 cup beef stock
      * 3/4 tsp. vegetable oil
      * 4 pork shoulder blade steaks
      * 2 tart red apples, cored and halved
      * 1/4 tsp. cinnamon
      * 2 tsp. sugar

      Preheat oven to 350°F. To prepare apple stuffing, combine first 7 ingredients and salt and pepper to taste in a bowl. Heat oil in a heavy nonstick skillet over medium heat. Sauté steaks 2-3 minutes per side, or until browned. Season with salt and pepper and transfer to a shallow baking pan. Cover each steak with a layer of apple stuffing. Top each with an apple half, cut side up. Sprinkle apple with cinnamon and sugar. Cover pan tightly with foil. Bake 1 hour.
