Potato Cheese Soup
Start with a big pot of mashed potatoes (about 4 cups). Add 2 1/2 c.
chicken broth, 1 cup milk and a little salt and pepper. Stir until hot.
Add sharp cheddar cheese and serve.Filling and delicious.

I realize I may be resurrecting an old thread from 2006, and some people may not like that, but this potato cheese soup recipe is one of the things that made me join budget101 years ago. I’ve kind of made this recipe my own over the years, but it’s still a family favorite. Being allergic to things in the onion family made it impossible to eat ready made potato soup.This recipe not only turned out to be a family favorite, but people who have had it ask me for the recipe. I don’t add the cheese to the pot, I serve it along side with the garnishes, and we garnish with anything that would go on a baked potato. (that we have on hand.) It makes everyone happy to personalize their soup to the way they like it.
