This is more a suggestion than a recipe…but it’s one of my favorite healthy meals to eat when I’m crunched for time and want to eat cheap! It takes about 5 minutes to make and provides 3 decent-sized meals. This meal typically costs me $6-7 total when I don’t have coupons.
INGREDIENTS
1/2 package teriyaki tofu (I love Trader Joe’s)
1 package microwaveable jasmine rice (also love Trader Joe’s Organic Jasmine Rice)
1 package Stir Fry vegetables (I typically use Bird’s Eye Snap Peas, Water Chestnuts, Carrots and Broccoli Mix)
Teriyaki sauce, to taste
1. Dice up your tofu into bite-size chunks.
2. Heat up your rice and vegetables according to directions and combine.

Once out of microwave, toss in your tofu and drizzle with your desired amount of teriyaki sauce!
