Hi all! I am looking for ideas for super-fast, easy and HEALTHY meal
ideas for those days when dinner absolutely needs to be on the table
in less than 30 minutes. A lot of what I find out there are not quick
(too much prep work) or not healthy.
I’ll share mine and hopefully you can share yours. Thanks!
5 or 6 Chicken Thighs (breast work too)
1 pkg taco seasoning
1 cup salsa (or to taste)
minute brown rice (in quantities for your family)
1 can red beans
chicken broth (enough to cook rice in)
(NOTE: Zatarans Red Beans & Rice can be substituted for beans and
rice – we keep a pack of the 60 second version on hand for super-
Start preparing rice according to package directions, substituting
chicken broth for water and adding cajun seasonings to water. Stir in
drained canned beans when you add rice.
Preheat oven to 350 degrees. Sprinkle chicken with taco seasonings
and arrange in sprayed casserole dish. Top with salsa and bake for 30-
35 minutes until no longer pink.
Serve on rice.
Optional: a dallop of light sour cream and/or a sprinkle of 2%
