Question about used oil

      Do restaurants change their oil everyday? I kinda doubt it. People

      most always used to save the oil they’d used for frying (and bacon

      grease, lard etc). If it’s rancid you’ll know it right away by the

      smell. If you’re worried about bacteria growing in it, think what a

      high temperature you use for frying. My mom always kept it from one

      time to the other (of course she fried them in shortening back then –

      yuck). If it still worries you, you could have her store it in the
