Queso Dip
1 tbs butter
3/4 cup chopped onions
1 cup beer
1 lb American cheese, cut into 1/2-inch cubes
1 can Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
Melt butter in medium skillet on medium heat. Add onions. Cook 5 to 7 min or until crisp-tender, stirring frequently.
Stir in beer. Simmer on medium-low heat 3 min, stirring occasionally.
Spoon into 1-1/2-qt. casserole sprayed with cooking spray.
Add cheese and tomatoes.
Mix well. Cover.
Microwave on high 5 min or until cheese is completely melted and dip is well blended, stirring after 3 min. Serves 24
