Pumpkin Spice Mug Cake

I look forward to this one every fall, it’s really simple to throw together, the base mix is just 2 ingredients!

Pumpkin Spice Mug Cake

1 pkg. (2-layer size) spice cake mix
1 pkg. (3.4 oz.) JELL-O Pumpkin Spice Flavor Instant Pudding
Combine the cake mix and the pudding mix in a bowl (dry) and mix until completely blended.

I mix the 2 ingredients above together and then package it up in baggies with 1/3 cup of mix, it makes 9 cakes in all.

To make a Pumpkin Spice Mug Cake

1 egg
1 Tbsp. oil
1 Tbsp. water
1/3 cup Pumpkin Spice Mug Cake Mix (as listed above)

Spray a microwave save coffee mug with nonstick cooking spray, add oil, water, and egg, mixing until combined, then add the pumpkin spice cake mixing, mixing with a fork until combined.

Microwave on HIGH 1 to 1 1/2 min, depending on your microwave. Cool 2 min. before serving.

I usually add a couple squirts of whipped cream and then drizzle with caramel sauce, but you could sprinkle with powdered sugar or add a scoop of ice cream to the top prior to serving.
