2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
Layer ingredients in order given in a quart jar. Attach an ingredient card with the following directions to make.
2 cups milk
1 cup pumpkin puree (or cinnamon or caramel applesauce)
2 eggs
2 tablespoons vegetable oil
2 tablespoons apple cider vinegar
In a large bowl, mix milk, pumpkin, egg, oil and vinegar in 1 bowl.
In another bowl, combine flour, brown sugar, baking powder, baking soda,
allspice, cinnamon, ginger and salt. Stir into the pumpkin mixture just enough
to combine. Let sit 5 minutes before cooking.
Heat a lightly oiled griddle or frying pan over med-high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each
pancake. Brown on both sides and serve with butter and hot maple syrup.
SERVES 3 -4 , 12 pancakes
This would also be a great gift basket idea. Place the gift jar in a basket with a can of pumpkin puree or pumpkin butter, or a bottle of apple cider vinegar for your favorite person to enjoy it all. You can also add a small bag of apple cider or pumpkin spice coffee to, to round out the theme.
