Ingredients:
2 1/2 cups vanilla wafers — crushed
1 cup ground almonds — toasted
3/4 cup confectioner’s sugar — sifted and divided
2 teaspoons ground cinnamon
6 ounces semisweet chocolate chips
1/2 cup canned pumpkin puree
1/3 cup coffee liqueur
1/4 cup powdered sugar — sifted
Directions:
In medium bowl blend together the vanilla wafer crumbs, ground almonds, the 1/2 cup confectioner’s sugar, and cinnamon.
Blend in the chocolate chips, pumpkin puree, and coffee liqueur. (Apple juice may be substituted for coffee liqueur if desired.)
Take about a teaspoon of the mixture and roll into 1-inch round balls.
Refrigerate to firm, then dust with remaining confectioner’s sugar just prior to serving.
