Pumpkin Chocolate Chip Cookies- these are super simple to throw together, my kids make them all the time. My daughter even swaps out the canned pumpkin for mashed sweet yams (during the holidays) and they’re awesome, she also adds a couple handful of raisins too.
1 C pumpkin 3/4 C sugar 1/2 C oil 1 egg 2 C flour 2 tsp baking powder 1 tsp cinnamon 1/2 tsp salt 1 tsp baking soda 1 tsp milk 1 tsp vanilla 1 C chocolate chips
Dissolve baking soda & milk and set aside. In a large bowl mix pumpkin, sugar, oil & egg. Stir then add flour, baking powder, cinnamon, salt & baking soda mix.
Stir in chocolate chips & vanilla. Spoon onto cookie sheet. Bake at 375′ for 10-12 minutes.
