Pumpkin and Spice and Everything Nice Muffins
1 1/4 cup all purpose flour
2 teaspoon pumkin pie spice
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup plain low-fat yogurt (2%)
1/4 cup margarine, melted
1 teaspoon vanilla
1/2 cup raisins
1/2 cup wheat bran
1 teaspoon baking soda
1 cup canned pumpkin (not pie filling)
1/2 cup honey
1 egg
1 cup finely grated carrotsPreheat oven to 375 degrees. Spray 12-cup muffin tin with cooking spray and set aside. In a medium bowl, combine flour, wheat bran, pumpkin pie spice, baking powder, baking soda, and salt.
Set aside.
In a large bowl, whisk together pumpkin, yogurt, honey, margarine, eff and vanilla. Stir in carrots. Add dry ingredients to wet ingredients and stir using a wooden spoon just until moitened.
Fold in raisins. Batter will be thick.
Divide batter evenly among 12 muffin cups. Bake on middle oven rack for 20-22 minutes, or until wooden pick inserted in centers comes out clean. Cool on a wire rack.
Makes 12 muffins.

Now this recipe sound yummy…I have to get some wheat bran, I haven’t used any of that in awhile..Thks Dear One..

Will warn you this are soft muffins. Even better the next day-had some for breakfast LOL
