This is a recipe that you can make at home, eat at home, or take on your next camping trip!
It’s a great first-night recipe that you can throw together for a great meal after setting up camp;-D
2 lb pork roast2 cups chicken broth
1 cup water
1 1/2 tsp salt
1/2 tsp black pepper
1 package sandwich buns
8-oz can of tomato sauce
1/2 cup apple cider vinegar
1/2 cup brown sugar
1 tsp mustard powder
1 tsp black pepper
1/2 tsp onion powder
1/2 tsp cayenne
1/2 tsp salt
Heat 2 tbs of vegetable oil in a large skillet.
Season pork roast with salt and pepper and place into pan. Sear each side of roast for 2-3 min. Transfer to slow-cooker, add chicken broth and water.
Cover and cook on high for 1 hour. Reduce heat to low and cook for 6-8 more hours. Once pork roast is tender, carefully remove from slow-cooker and place onto a large cutting board.
Discard any liquid remaining in cooker.Let roast rest for at least 10 min before handling. Shred pork, place back into slow cooker, cover and keep on low heat. Meanwhile, heat the sauce ingredients in a medium saucepan.
Simmer for 3-5 min over medium-high heat. Make sure to stir often and watch for burning. Reduce heat if the sauce is bubbling too much.
Remove from heat and pour into slow cooker and using a large spoon, carefully combine the sauce with the pork. Either serve immediately on sandwich buns, or cover and keep on warm. Add additional water is sauce reduces too much during the warming phase.
Prepare sandwiches if eating at home. If preparing for a camping trip, place in a container (and transfer to cooler when ready) for the trip.
At the campsite, start fire, and dump container into Dutch oven. Place on edge of fire, remembering to stir often, and set up camp.
Once heated thoroughly…about an hour…serve on sandwich rolls with chips on the side and enjoy!
I usually prepare a meal like this for the first night…I don’t have the energy to prepare anything from scratch on the first night after setting up camp! LOL! Serves 4-6
