Pulled Pork Pizza
1 tbs olive oil
1 clove garlic, finely minced
2 tbs finely minced onion
3/4 cup ketchup
2 tsp Worcestershire sauce
1/3 cup cider vinegar
2 tbs brown sugar, packed, light or dark
1/8 tsp ground black pepper
dash cayenne pepper
thinly sliced plum tomatoes
1 cup chopped leftover pulled pork
1/2 to 3/4 cup thinly sliced red onion
1/2 cup thinly sliced peppers
sliced black olives or jalapeno peppers, optional
4 oz shredded Mozzarella cheese
2 to 4 oz shredded mild Cheddar or a combination of Cheddar and Monterey Jack cheeses
In a saucepan over medium heat, saute onion in olive oil until tender.
Add garlic and cook for 1 minute longer. Add the ketchup, Worcestershire sauce, vinegar, brown sugar, salt, and black and cayenne peppers. Bring to a simmer.
Reduce heat to low and cook, stirring frequently, until thickened.
Meanwhile, prepare the pizza crust by hand or in the bread machine. Fit the crust in a regular or deep dish pizza pan.
Spread about 1/2 cup of the sauce over the crust.
Top with the pulled pork, tomatoes, onion, bell pepper, and other toppings. Sprinkle the cheeses over all.
Bake pizza at 425° for about 20 minutes or until crust is lightly browned, or follow the directions for your particular pizza crust recipe and method.
Makes a 12- to 14-inch pizza.
