Potatoes with Paprika
2 to 2 1/2lb red-skinned potatoes, peeled and rinsed
2 tsp Hungarian paprika
1 tsp salt
1/4 tsp ground pepper
1 tsp onion powder
1/2 tsp dried leaf thyme, crumbled
2 tbs olive oil
Preheat oven to 375°.
Cut potatoes into 1 to 2-inch pieces.
Toss the potatoes with paprika, salt, pepper, onion powder, thyme, and oil. Let stand for 5 to 10 min. Put the potatoes in a lightly oiled open shallow baking pan and bake for 45 min, or until potatoes are tender. Serves 4
