Microwave 2 baking potatoes on high heat until tender, about 8 minutes. Peel, then mash with 1/4 cup each butter & heavy cream; season with salt & pepper. Fill 16 white stuffer mushrooms. Bake in a 375 degree oven for 15 minutes.
Let cool slightly, the top with sour cream & snipped chives.
Potato-Stuffed Mushrooms —-Never thought of putting these two ingredients together..I really like stuffed mushrooms..And putting mashed potatoes in them sounds good. Could eat mashed potatoes any time..
