Here’s how I make cheesy potato soup. My sister sent me the recipe and called it “Stuffed Spud Soup” We all love it!

One 2 lb. package shredded hash browns, thawed
One can condensed cream of chicken soup
One small onion, chopped (about half a cup)
      1/2 cup margerine
      3 to 4 cups milk
      salt & pepper to taste
Two cups shredded sharp cheddar cheese

Saute onions in margarine. Add soup, milk and potatoes and heat through. Stir in cheese and heat until cheese is melted.

I go easy on the milk, only 2.5 or 3 cups, so the soup is thicker.

It definitely costs more than $2.50 to make but it does make a large potfull.
