      Potato Salad

      5 to 6 red potatoes or white potatoes, similar in size
      1/2 cup vegan mayonnaise
      3 tbs vinegar
      1  onion, diced
      2 stalks celery, diced
      Optional: 1/3 cup sliced black olives
      Optional: 1/4 cup vegetarian bacon bits
      Salt, to taste
      Pepper, to taste

      Bring a large pot of salted water to a boil.

      Add potatoes and cook until tender but still firm, about 15 min.

      Drain the potatoes in a colander and cool completely about 15 min.

      Peel the potatoes and chop into even bite-sized pieces. Set aside.

      Gently toss together all the remaining ingredients in a large bowl.  Add the potatoes gradually and mix with the ingredients until evenly distributed.

      Season with salt and pepper to taste.

      Chill for at least 1 hour before serving.  Serves 6-8
