      2 eggs-beaten
      2 tbsp AP flour
      1 med onion-grated
      1 1/2 tsp salt
      1/4 tsp pepper
      6 medium potatoes-grated/shredded
      1 tbsp minced parsley
      3 tbsp butter
      3 tbsp olive oil

      1. In a large bowl, add eggs. Beat in flour. Add onion, parsley, s and p.
      2. Gently stir in potatoes.
      3. In a heavy bottomed skillet, heat 1 tbsp butter and 1 tbsp olive oil. When hot, drop potato mix by spoonfuls into skillet; flatten. (Don’t over crowd skillet-make several batches so latkes will brown.)
      4. Cook until golden brown, then flip. Cook until brown. Drain on a paper towel.
      5. Repeat steps 3, 4, & 5 until all are done.
