Alternately, you can make a cold dish out of it, either Italian canalesa or
salpicon. For canalesa, shred it finely and mix with chopped
celery, parsley, garlic and olive oil. For salpicon, shred finely, mix with
shredded radish, lettuce, parsley, and lemon juice and serve
with tortillas, beans, and rice.
