Pork Fried Noddles

      You can use any leftover protein, pork, chicken, steak, roast, turkey or even tofu

      For 4 servings

      approx. 2 cups leftover pork, shredded *fresh meat cut in 1/4 ” slices can also be used
      8 oz. thin spaghetti or linguinni or fettuchini broken in half, cooked al dente’
      2 eggs scrambled, cooked
      3 scallions 1/2″ slices including tops
      2-3 mushrooms sliced (optional)
      2 cups fresh or frozen vegetables (broccoli, spinach, zucchini, matchstick sliced carrots
      what ever is on hand or a mixture of veggies)
      1 garlic clove minced
      2-3 Tbls soy sauce or to taste (I use Teriyaki sauce)

      Cook pasta al dente, drain and keep warm. Use a small amount of cooking oil to stir fry vegetables and garlic, until partially cooked but still crisp tender, remove to bowl, cover to steam and set aside. If using fresh meat, stir-fry in pan,until until cooked but still a little pink, sit aside. Add a little oil to pan, add pasta, leftover meat, and vegetables and garlic mixture. Combine together. Add scrambled eggs, sprinkle with soy sauce to taste. Heat together until hot.

      This works with any leftover meat you may have on hand. For my family of 3 adults, I use 2 pork chops cut in thin strips if I don’t have leftover meat. Use whatever pasta you have on hand, noodles also work well.
