Apricot-Pork Salad
3/4 lb cooked pork chops, fat trimmed and bones removed
2 cups mixed salad greens
6 fresh ripe apricots, cut into wedges
3/4 cup shelled walnuts, toasted
1/3 cup red wine vinegar
2 tbs sugar
3/4 tsp tarragon
1/4 tsp marjoram
1/4 tsp thyme
1/2 cup olive oil or vegetable oil
Cut pork chops into strips. Place greens in salad bowl. Top with pork, apricots, and walnuts.To make dressing, combine remaining ingredients in a jar and shake thoroughly. Top salad with dressing. 4 servings = about 580 calories.
