This is something that you can prepare some of the ingredients ahead and toss together at the campsite OR just make at home.
Polish Tomato-Rice Soup
2 tbs butter
1 chopped onion
2 sliced ribs celery
2 peeled and sliced carrots
1 clove minced garlic
6 cups chicken or vegetable stock
2 lb peeled, seeded and chopped tomatoes
1/2 tsp crushed thyme leaves
salt and pepper to taste
1 cup cooked and cooled rice
1/2 cup sweet or sour cream (optional)
To make ahead for the camping trip: In a large saucepan, sauté onion, celery, carrots and garlic until onion is translucent.
Add stock, tomatoes, thyme, and salt and pepper to taste. Bring to a boil and remove from heat. When cooled pour into a container for the trip.
Prepare rice and package for the trip or use 1 cup left-over rice. At the campsite, empty the ‘soup’ container into a Dutch oven and bring to a boil. Shift the Dutch oven on the fire and simmer uncovered for an hour while setting up camp.
Add rice and continue to simmer until heated through. Ladle into bowls and top with sour cream if desired.
To make at home: In a large saucepan or Dutch oven, sauté onion, celery, carrots and garlic until onion is translucent. Add stock, tomatoes, thyme, and salt and pepper to taste.
Bring to a boil, reduce heat, and simmer uncovered 1 hour or until carrots are tender and soup has reduced somewhat.
At this point, the soup can be pureed, if desired. Add rice and heat through. If desired, sour cream can be added at this point.
