      Don’t know what to do with the left over Christmas ham…have more eggs than you need…make a tasty breakfast frittata.smiley-char026 smilie

      Frittata

      1 c. left over veggies
      1 c. left over meat – diced ham, cooked bacon, diced chicken, crumbled sausage
      1 1/2 c. shredded cheese, any type
      4 eggs
      1/2 c. all-purpose flour-optional,(I’ve actually forgotten this and it was fine lol)
      1 c. milk
      salt & pepper to taste

      Pre-heat oven to 350 degrees.
      Grease 9.5×11 in casserole dish.
      In a large bowl combine vegetables, meat and cheese.
      Spread into casserole.
      In medium bowl whisk eggs until lemon colored.
      Whisk in flour until smooth.
      Stir in milk until well blended.
      Season with salt and pepper.
      Evenly pour egg mixture over vegetable mixture.
      Bake at 350 degrees for 40 minutes or until eggs are set and top begins to brown. Allow to set for 5-10 minutes before serving.
      -OR-
      Preheat oven to 350.
      In an oven safe non stick skillet, melt 1 tbsp butter.
      After mixing all ingredients, pour into prepared skillet.
      Cook for approx 15 minutes on medium until eggs are well set.
      Transfer skillet to oven for 15-20 minutes or until done.

      I’m lazy and usually do my frittatas in the oven! LOL! I think that I have posted half a dozen or so, so take a peek using frittata as the key word in search for other suggestions for what you might have on hand;-D
