      Pistachio Cake

      1 pkg. White or Yellow Cake Mix
      1 4 oz. pkg.

      pistachio instant pudding & pie filling
      3 eggs
      1 cup club soda, lemon-lime flavored beverage or water
      1/2 cup oil
      1/2 cup chopped nuts

      Combine all ingredients in the large bowl of electric mixer. Blend; then beat at medium speed for 2 minutes. Pour into a greased and floured 9 x 13 inch pan.

      Bake at 350 degrees F for 40 to 45 minutes or until cake springs bake when touched. Cool in pan 15 minutes and then remove.

      Mix 1 1/2 cups cold milk and one 4 ounce package Jello Pistachio Instant Pudding & Pie Filling and one envelope of Dream Whip Topping Mix. (Or a small tub of Cool whip and the package of pudding).

      This can also be used to make cupcakes or mini cupcakes.
