Pioneer Cobbler
4 tbs unsalted butter
3/4 cup flour
3/4 Cup sugar
1 tsp baking powder
1/4 tsp salt
3/4 cup milk
1 peach, sliced
1/2-1 Cup blackberries
1-2 tbs cinnamon sugar
Heat the oven to 350°, and place the butter in an 8-in pan. Place the pan in the oven for about 2 min, or until all of the butter is completely melted.
Remove from the oven and set aside.
Meanwhile, in a large bowl combine the flour, sugar, salt and baking powder. Whisk to combine, and add the milk. Whisk again to incorporate the wet ingredients and make a smooth batter.
Pour the batter into the buttered pan, and top with fresh fruit. Sprinkle evenly with cinnamon sugar.
Place in the oven for 35-45 min or until cooked through.
Serve hot with fresh whipped cream.
