Pancakes are a favorite for many families, but I get tired of the same old thing every week. I usually make a bunch ahead of time and freeze them so we can reheat them in the microwave on busy mornings and still have a hot breakfast. Here is a yummy twist on an old favorite- Pineapple Upside Down Pancakes.
1/2 cup butter
1/2 cup brown sugar
Melt the butter in a skillet, add the brown sugar, mix for a minute and add the pineapple rings, caramelizing them.
In a Bowl Whisk the following:
2 1/2 cups cake flour
2 TBS Baking Powder
2 TBS Baking Soda
1/4 tsp Salt
1/2 cup sugar
Mix, then Add :
2 1/2 cups Milk
1/4 tsp vanilla extract
1/4 c. Melted Butter
Heat the skillet, add a pat of butter, let it melt, pour about 1/2 cup pancake batter in middle of pan (it should be thick!) then add a pineapple ring to the pancake and a cherry to the center.
Let them bubble around the edges before flipping (not sure why the guy in the video is flipping raw pancakes, but don’t do that, you wont like the outcome!!!)

Nice twist on an easy breakfast and great way to get fruit into breakfast;-D
