      2 lbs pork, cut into 1″ cubes
      1 14-oz can pineapple chunks, drained (save liquid)
      1/4 cup vinegar
      1 tsp ginger
      1 tsp olive oil
      Lightly oil a skillet, heat to medium, stir fry the pork until no longer pink inside, add remaining ingredients, reduce heat to low and simmer 10 minutes. Serve over Hot Rice

      Made one small change and that I a combination red, yellow and orange bell pepper. It turned out really delish
