      1 tsp vanilla
      2 (20 oz) cans pineapple chunks or tidbits-drained
      16 oz ricotta cheese
      1 tbsp sugar
      1/2 cup honey
      toasted shredded coconut-for garnish

      1. Whisk ricotta, sugar, and vanilla until smooth.
      2. In a large dessert dish, layer half the pineapple then half the ricotta mix.
      3. Drizzle half the honey over the layer.
      4. Repeat layers and garnish with the toasted coconut.
