Pineapple-Coconut Upside-Down Cupcakes
20-oz can pineapple chunks in juice, undrained
3-oz pkg lemon flavored gelatin
24 maraschino cherries, drained
1 pkg 2-layer sizeed yellow cake mix
1/3 cup oil
1 cup flaked coconut
Heat oven to 350º.
Drain pineapple, reserving 1 cup juice. Place pineapple chunks in medium bowl. Add dry gelatin mix.
Stir to evenly coat pineapple. Place cherry in each of 24 paper-lined muffin cups. Spoon pineapple mixture around cherries.
Beat cake mix, eggs, oil and reserved pineapple juice in large bowl with mixer until blended.
Stir in coconut. Spoon over fruit in muffin cups. (Cups will almost be completely filled.)
Bake 16 to 18 min or until toothpick inserted in centers comes out clean.
Cool cupcakes in pans 10 min. Remove from pans to wire racks. Cool completely.
Invert cupcakes onto plates just before serving. Remove paper liners. Makes 24

These sound lovely! Does the homemade cake mix on the site change the baking time at all? I actually have the large muffin tins (they’re basically double sized), this would make really neat “shareable” desserts for the end of a romantic dinner.
Look at that, it’s not even Christmas yet and all I can think of is Valentines.

Only the larger muffin tins would affect the baking time.
I don’t know the size of your tins, but I would adjust the time by increasing it 4-5 min and visual check for being done (browning around the edge) and of course the toothpick test. Remember to make a note of the amount of baking time for the larger tins so that you can duplicate the recipe when you want to do something for your sweetie.
This actually originated as a recipe that my dm would make as a cake for my df.
dd came home one day and said that we had to bring cupcakes for the holiday celebration and they had to be super special because it was a holiday! that’s little-girl speech for they can’t be like any other cupcake! lol!
fortunately, i had a couple of weeks to work on the project and was able to adapt dm’s cake recipe to cupcakes. since the cupcakes were a success, she wanted us to make them for her granddady for father’s day. we did and he was very happy.
so i hope your dh enjoys them!
