      When we have Mexican dishes, we always serve it with this and a small salad or avacado salad and refried beans.

      Pico De Gallo

      Ingredients

      * 1 1/2 cups seeded, diced roma tomatoes
      * 1/4 cup minced red onion
      * 1 tablespoon diced jalapenos-with or without the seeds and ribs depending on the heat level desired
      * 1 tablespoon minced garlic-roasted minced garlic is even better
      * 2 limes, juiced
      * 2 tablespoons minced fresh cilantro leaves
      * Salt and pepper-to taste

      Directions

      Combine all ingredients in a bowl. Season with s and p to taste.
      If desired, garnish with additional cilantro.
